For our very first batch we have decided to create a white rum to release just in time for the summer. Over the years we have brainstormed variations of this recipe and were enthusiastic to make this our first release.
With our first batch being very small, only 120 bottles, we decided to use a molasses that is both traditionally Canadian and of very high quality - Crosby's. As well, as opposed to using commercial distilling yeast we used fresh yeast we were able to grab at a local bakery. This recipe provides you a unique chance to experience a homemade and flavorful type of white rum that is hard to come by.
